How do I know the change is legit?

Should I make him pay with certified check.

How do I know the change is legit?

Run a magnet over the coins. Don't accept anything that attaches to the magnet. It's just like the pen test but more bitchin' because electromagnetic forces > fancy ink. Don't be surprised if the buyer gets pissy and walks away from the deal just because you don't trust a stranger 100%.
