Death By Chocolate.....
2-boxes chocolate jello pudding. (prepare as directed on box)
2-small containers of cool whip
1-box of chocolate chunk brownie mix (prepare as directed on box)
1-package of oreo cookies.
Chop up oreo cookies into "dirt like" consistency
Cut (previously made) brownies into 1"x1" squares
Locate, beg, barrow or steal a large bowl. I have a big glass bowl myself.
Layer the pre-made, pre-chopped goodies.
1" layer pudding
1" layer brownies
1" layer coolwhip
sprinkle oreo "dirt" over coolwhip layer
continue pattern until everything is gone or you run out of bowl.
try to gauge layers so that the oreo dirt ends up on top
keep chilled until ready to serve.
I found that everyone, including the friends and family that are "dieting", can't resist this desert. I have prepared this for many social functions and I am always asked to bring it "next time"

1 cup ketchup
1 cup strong coffee
1 cup worcestershire
1/2 cup apple cider vinegar
1 cup brown sugar
2 Tbs chili powder
2 Tbs honey
1 Tbs dark molasses
1 cup chopped onion ( i use red but any will work)
3 cloves of garlic chopped
hot pepper flakes optional
combine, simmer for 25 minutes and puree

Here is an easy salsa type dip that I get requests for
Black-Eyed Pea and Pepper caviar
3 cans Black-eyed peas, rinsed and drained
2 med tomatoes, seeded and chopped
1 cup Italian dressing (lite works well)
3/4 cup chopped onion
1 cup chopped bell peppers, I like yellow and orange for color
1/4 to 3/4 cup chopped jalapeno's, seeds removed if you are a wimp ( I usually use around 8-10 jalapeno's with 1-2 habenero's for heat)
2 cloves garlic minced, about 1 1/2 teaspoons
1/2 teaspoon cumin
1/2 teaspoon pepper
Combine all in large bowl and chill for a few hours. Serve with Frito's Scoops or tortilla chips.

this is stock out of the cook book but its the best meat loaf i like, I tend to put more horseradish and add some catsup and BBQ sause together for the topping and more onions and garlice and some pepers in it but that would be up to you!
2/3 cup old fashion oats
1/2 cup milk
1 pound of lean ground beef or veal
1/2 cup fresh spinach leaves (this i leave out) :stan3:
1/4 cup minced Onion
2 large egg whites lghtly beaten
1 tsp prepared horseradish
2 tsp italian seasoning
1 teaspoon Worcestershire sause
1 garlic clove minced
1/2 teaspoon salt
I use one of them new fangled Meatloaf pan (2 parts and the fat drips down to the lower away from the loaf!)
combine oats and milk and let sit for few min and the rest of the stuff and mix put it in the pan put catsup/ BBQ sause on the top and stick it in the pan and cook untill 160 * in the center!

1/2 L&P worcestershire
3 table spoon olive or veg oil (i use extra virgin):tonka:
3 table spoons balsamic vinigar
1/4 tea spoon of salt! for 30 min aside (i try and do over night!)
I do this to my chicken bones less breast then BBQ

First I coat the bottom side of the tortilla with the butter. Then I spread some refried beans on the tortillas first followed by the chicken chunks, shredded cheese (usually co-jack or mexi-mix) and some finely diced tomato. The wife likes black olives on hers. I use one of those short jars of salsa to dip into afterwards. Pizza cutter work great on these too.
I got a few of those Calaphon pans over the last couple years. Wow those things make cooking clean-up a snap. I am yet to encounter anything that doesn't come off with a rinse-off. Nothing sticks to them, cheese, eggs, etc. They aren't cheap but boy make life easier.
I will have to get the wife to give up the details on the stuffed-with-cheese meatballs she made the other night.

2 cups pasta ( elbows, small sheels, bowties work best)
2 12oz cans of Cream of mushroom soup
1/2 cup mixed vegetables frozen ( this way they're crunchy after baking )
1/2 cup croûtons ( choice of season/flavor spices up the dish )
1/2 cup milk
1/4 cup sour cream
2 cups shredded cheese ( I prefer 1 cup sharp chedder and 1 cup jack )
1/4 cup bacon bits
teaspoon of pepper
cook pasta for HALF listed prep time. Usually 4 minutes give or take. Mix crap in baking dish that can hole it all. I think i use a 2 quart round dish, but for more crispy top you can use a shallow lasagna pan too. Bake for 1 hour at 350 uncovered. I usually dust the top with parmesean cheese
substitute tuna for any meat in small chunks
add diced potatoes
remove croûtons for a slightly thinner mix
replace mixed veggies with corn and black beans and use mexican cheese for a more southwest taste

This is a recipe I had found on the web a while back that my husband and I really really really like
We eat a lot of chicken, so I have to find new ways to eat it.
Caramalized Onion Chicken
1 lb. chicken breast tenders
1/2 tsp salt
1/4 tsp freshly ground black pepper
(I just use whatever I need to to cover the chicken for both the salt and pepper, I don't go by the tsp stuff.)
1 tsp olive oil
1/2 cup sliced onion
1/2 cup seedless raspberry jam
1 tbs red wine vinegar
1 tbs low-sodium soy sauce
1 tsp bottled minced ginger
1/2 tsp dried rosemary
sprinkle chicken with salt and pepper. heat oil in a large non-stick skillet over med-high heat. add onion and saute 2 mins. Add chicken to pan; saute 8 mins. or until chicken is done.
Remove onion and chicken from pan.
Add Jam and remaining ingrediants to pan; cook 2 mins. stirring constantly with whisk. Return Chicken and onion to pan; cook 4 mins. stirring occasionally.

2-lb. bag frozen hash browns We always use a bag of the southern potatoes...they're the potatoes that are cut into cubes.
16 oz. sour cream
1 can cream of chicken soup
½ cup chopped onion
8 oz. cheddar cheese
Light dash of pepper
½ stick of butter, melted
2 cups seasoned bread crumbs
½ stick of butter
Put potatoes in a 9x12 inch pan.
Mix sour cream, soup, onion, cheese, pepper, and ½ stick melted butter; pour on top of potatoes.
Mix bread crumbs with remaining ½ stick melted butter and sprinkle over potatoes.
Bake 1 hour at 375 degrees.
I asked my mom and she puts the potatoes in the crock pot when needed. This is by far my favorite potato recipe. When making it for me, I half the recipe. Personally, we never use the bread crumb/butter for the topping. If you are going to put it in the crockpot, I probably wouldn't use the topping. Now that I think about it, I don't think we've ever used that bread crumb topping...but that is totally up to you.
