I had to look up 'off piste'

Did not mean what I thought.

So, he was skiing off the marked trails?

Kind of what a lot of people do off-roading or sledding. Good thing he was not alone.

Hope he pulls through.

this.

However some resorts will post the bowls/back country as closed from time to time depending on conditions, but they are never really off limits, just at your own risk type things.

Well in the end I am sure they would help most anyone, as Bones said, it is more of a use at your own risk type of thing. A lot of times it's also not "resort maintained/owned" property. Many of the resorts (in the US) are actually on Land leases from land management bureaus so out of bounds may not be on land included in the lease.
