Default Turkey Meatloaf - not your average loaf of meat.

Here's a recipe for a light, very delicious meatloaf that isn't full of ketchup and other nasty shit.

1 whole turkey
small bunch of spinach
3 cloves of garlic
1/2 lb of bacon
6 fresh basil leaves
1 granny smith apple
1 red onion
2 tsp of chilli powder
3 eggs
Small bit of fresh thyme
2 Jalapeno peppers
dash of salt
1/4 cup flax seed flour

Steps

1) De-bone the turkey. Slice all meat in to 1-1.5" strips so you can work with the meat easier.

2) Grind the whole turkey into burger, alternate between pieces of light and dark meat as the dark meat will clog up the grinder faster due to the higher fat content.



3) Cook the bacon untill about half-way done in a frying pan and remove from heat.



4) Peel and Dice the onion, mince the garlic and saute in a couple teaspoons of the bacon fat that was left behind.

5) While onion/garlic is sauteing, dice apple into chunks and food process the jalapenos (I leave the seeds in for a little added heat.). Cut bacon in to small-ish pieces. In a large bowl mix 1.5LB's of the turkey (I put the rest in freezer bags and put in freezer) in with the spinach, apple, thyme, basil, eggs, flour, jalapenos and salt. When onions are starting to become clear from cooking, put those in the bowl as well.



6) Mix everything together really well and put in a non-stick bread pan (or use parchment paper, or use pam/butter/oil on the pan for ease of removal). Bake at 350 degrees for 1 hour, or untill reaching an internal temperature of 165 degrees. Remove from oven and let cool for ~15 minutes before removing from pan.





I couldn't decide what to use for a side, so, I decided to make some fresh green beans. For this, I sauteed 1/2 of an onion, added some almond slivers, garlic, cayenne pepper and about a tsp of honey to caramelize them. After the onions were starting to be done, I added everything else and turned the heat up quite a bit. Here's the result:




While I was at, I had a bag of beef strips marinating in the fridge, so I put them in the dehydrator.

I bought the turkey and pork belly from a local farmer, the bacon I cured myself in a cold smokehouse that I built. The herbs, spinach, garlic and the peppers I grew myself.

I'll admit, I did buy the flour, eggs, chilli powder, apple, green beans and salt from the grocery store.

Guess ya got me there. I'll just start buying everything in cans from now on.

Turkey is the secret meatloaf ingredient.... We've been using it for a while now. That recipe sounds similar to ours except we glaze the top with a ketchup-brown sugar-vinegar sauce the last 15-20 minutes of cooking and don't use the apples although I'm going to try that next time

mmm turkey meatloaf. I'd chiffonade the basil. WTF is chiffonade? Well, you stack the leaves, roll into a cigar shape, and cut across the cigar making very fine ribbons. You'll get better basil distribution and flavor balance.

I took this and changed it a bit i used shredded turkey ,green pepper, bacon, onion, eggs, flour, and a few other things, turned out great thanks for the idea
