Default Cajun Chicken Fettuccine Alfredo with Bacon

After posting pictures of my custom Cajun Chicken Fettuccine Alfredo with Bacon recipe on Facebook I have received an overwhelming demand for the recipe. I created this just winging it one night and finally typed it out. It's extremely simple and absolutely damn good delicious.

Cajun Chicken Fettuccine Alfredo with Bacon

What you'll need:

Two HUGE boneless chicken tits
Half a pound of very high quality thick cut bacon (hickory or applewood smoked)
One pound of your favorite brand fettuccine noodles
Olive oil
Your favorite cajun seasoning (I prefer Luzianne)
Two jars Classico Roasted Garlic Alfredo sauce (or make it from scratch if you wanna be fancy. That's what I use and I save the jar afterwards for drinking use. It's a real Atlas Mason jar)

Directions:

First start cooking up the bacon. You don't need to measure it out. I usually cook up nine strips of it on a flat iron.

Enjoy some beer while you do it. The smell of bacon in the evening will have you replacing all of your clothing with stuff from Duluth Trading Company.

Once the bacon is done set it aside on a plate. You want the bacon to be crispy but not burnt. Basically just crispy enough so you can crumble it all up in your hands.

Next grab a sharp knife (I use a SOG Seal Pup for this) and trim the fat and other goobers off the chicken tits. Dice it all up into SMALL chunks. I keep the nonstick pan with some olive oil in it right next to the cutting board to get it out of the way. The smaller you make the chunks the more it spreads out and lasts in the actual pasta.

Next you start cooking all the chicken over medium heat. HEAVILY season the chicken with the Luzianne cajun seasoning all throughout the process. Cook the hell out of it to almost get that cajun blackened goodness to it. Once it's all thoroughly cooked you need to reduce the heat and crumble all the bacon into the pan with the chicken. Keep it on low heat but just high enough to get some of that bacon fat out again so it adds a little bit more to the chicken.

Now... the hardest part of the meal. Fill a big pot with water and boil it. I add some sea salt to the water because it makes me feel special when I do. Cook the fettuccine noodles as the package suggests. I prefer the noodles a bit more firm. Yeah... I said it... I like firm noodles. Get over yourself.

Once the noodles are cooked you drain it all and return the noodles to the big pot. Add the cajun chicken/bacon combo to the noodles MAKING SURE YOU GET ALL OF THE BROWN BITS THAT MIGHT BE STUCK TO THE PAN AND ALL THE EXTRA JUICES IN WITH THE NOODLES.

Add alfredo sauce.

ENJOY. I absolutely love this meal.

Looks good. Do you drain any of the bacon fat before adding the chicken to the pan?

Bacon is cooked seperately from the chicken on a flat iron instead of the pan.

My wife is extremely anti-spicy. The dairy in the alfredo sauce cancels out any sort of real heat.

Make it and have them try it. My wife is the same way as your family but will devour the hell out of this meal.
