I don't wrap fish in foil, I prefer it right on the grill. Mahi Mahi doesn't need a lot of seasonings I agree, keep it simple. Sprinkle it with some blackened seasoning salt for a diff taste or like above says, sea salt, a little cracked pepper and your good. I personally never put butter on fish, I see no point in making a healthy food unhealthy.....but I'm kind of a health food nut. Really good served over couscous with some steamed veggies. And yes flip it, just spray the grill with a non stick spray first.....never had an issue

Medium high. Try a lime-based cayenne marinade. Using a grill brush, clean your grates well. Marinate 30 minutes, pat dry, grill. Brush fresh marinade on halfway through. Don't tent your fish unless you want to steam it. Always flip it. Don't use Susie-homemaker utensils- invest in commercial ones, it makes cooking much easier.


Then again, it's your fish, have fun experimenting!

Jill doesn't like fish so I don't grill it much. Mahi is just one fish I have never attempted.

I will buy some next time I am at the storm. That is if the flood didn't take out my grocery store. I still can't get over that way because this state is fucked! Lol
