You can change phones, you just can't upgrade to get a new phone. I bought an s3 for $600 outright to keep my unlimited. Still cheaper than the amount of data I would have used.

I had AT&T and am now on verizon, I travel a lot for work (around the state and across the country) and never have coverage issues.
