I agree it would be fun to jetski along a bike path or down a road through town, but with that water I would actually be more worried about hepatitis or other diseases that could be carried through. You have to think of the wastewater plants and sewer lines that flooded around there. Now think of all the people in the area that flushed their shit and piss down the drain. There has to be a lot of STD's floating around in that water, not to mention the ecoli and such.

I would use a sit down jet ski if I were to do this. May not be able to go everywhere these guys did but at least you would stay out of the water for the most part!
