Default 15 Quarts

For those of you who have never done this,

We just pressure cooker canned up an entire deer yesterday, (actually the wife did)

A large deer will only make 15 quarts of meet.

I always cheet from this and cut up for steak the inner and outer loins and the butchers heart from each rear quarter, which puts you down to 12 quarts.

Kind of a pain in the ass but, we have canned up deer meet and ate it four years latter and it was great. The wife always puts a piece of bacon in each quart at the top, it makes great stew, or sandwich meet.

it's been a long time sence i had it. use to eat it at deer camp all the time right from the jar.

never heard of a cut called the "butchers heart". what is it? is there a traditional meat market name for this cut, as in tenderloin?

Why are you using a common liquid measure for meat? Kind of disturbing.

I know a quart can be used for dry measure too or a unit of volume, but still.

I never heard of canned venison. I always butchered my own with a frozen carcas and a band saw. Made many steaks, a little for stew and sausages mixed with pork, and all the cuttings that were at the bottom of the bandsaw went to the dog, it was frozen meat, fat and bone dust. I didnt care for brain but the dog loved it. Only excess fat was thrown away! I wish I could hunt again!! Where i live now I have deer come right to my house under my bedroom window, if the window were open I could just grab the antlers. They dont care anymore that the dogs are barking their heads off. they will walk halfway up the street

Nothing like a bloody vension steak fresh off the grill...



..But canned is very good too. A buddy at camp does it. He did it for years and the Amish family down the road gave him a new recipe. Don't know what was in it, but fukc it was good.
