Default Pig Roast Recipe

I had a pig roast a few years ago and do not remeber what recipe we used, I remeber it turned out well. We used bags of apples and onions inside the pig. Does any one have a recipe they can share?

I like to inject mine with a solution of tender quick sugar and spices. pigs have enough fat that you dont need to inject any kind of oil. I inject and let it sit for a couple days in a cooler. I stuff them with saurkraut, carrots and taters.

I just had one done this past fathers day and we injected it with honey. It was very good. Also coconut milk is a good injection along with orange juice and apple juice. Or if you like use some Cajun spices to make a brine to inject.

inject with apple cider vinegar, lots of plain charcoal, mix of cherry/maple/hickory smoke chips. strictly corn fed non steroid pigs taste the best. find one 150-350 lbs and freeze the leftovers, enjoy.

how do you get that to go through your injector without clogging? Btw, corn fed pig = fatty as fukc . lean ftw.

The pig for mine had about 2in of fat on the belly and was perfect after we roasted it.

where did you get it from? The best pigs i have ever roasted came from my bro in law brads hogbarn. he raises breeding sows and they are fed properly and not on corn meal and slops. He ends up with a bunch of culls when he ship and you can get them cheap.

I've done this as a family business for 20 years, I'd say smoked sausage, not fresh is best inside, mixed with peppers and onions or for a hawaiian effect use fruit and a brown sugar mix and cinnamon mix. I advise against stuffing with chickens as cross contamination is possible. Injecting is nice too, we use our brine pump, but we also have a huge hand pump you can get at any cooking store.

Piggy is in the roaster, we got done withe concrete in front of the pole barn on Wendsday, so we are finally done with the pole barn project. I moved an old lazy boy into the pole barn, I have 24 coronas in a big bucket of ice, a half of a mason jar full of kentuckys finest, a lazy boy, a 5 gallon bucket for a stand next to the chair, a stereo playing hill billy music, fuck it is good to be an american.

Onions, apples garlic cloves, penut oil, I am considering adding some brown suger, I am a not done with this bear yet.

Thought that glaze looked off.

Marinade the thing in some honey and water for around 6 hours before injecting it with some honey and onions. When it heats up all the water will force the honey into the pork. I cook it in the ground wrapping it tightly and it comes out really tender.

Some friends is Shelby. All corn, soy and hay fed. Perfect for a roast or to process.

What a f,ing mess.

I am down in the pole barn drinking coffee, considering starting cleaning up the after mass of the teen age water fight / cheetos and shaving cream contest that some one dremnt up. I be lieve I got 20 bucks in empties though.

Any one want pulled pork left overs. I know what I am getting for lunch the rest of this week.
