Default Big Buck Brewery in Gaylord - Gross

Black river stout, my favorite beer in the world.
Beer cheese soup, my favorite soup in the world..


We always make a stop there when we go up north, or back south. We swung in there Sunday for some dinner.

Even though the place was pretty much empty, they put us within 30' of the kitchen, where we could see everything going on in there.

1. EVERYBODY in the back was eating, non-stop. People had nachos, chips and dip, one guy was eating a hamburger. Not sure if that is allowed, or if they were on break, but that's pretty gross.

2. The cooks were eating off the grill! Couldn't tell what they were cooking, but they were picking up food (with bare hands) and tossing stuff into their mouths. Wiping grease off their faces, etc.

3. The cooks were using tongs with the stuff on the grill (of course, its hot) but when they were dealing with the cheese, and buns, they were using bare hands.

4. They were putting their hands in their pockets, opening microwave doors, using salt shakers, touching everything in the kitchen... Never washing them before they touched customers food.


So big buck cooks do this:

cook, grab food with bare hands, eat off the grill, wipe off the grease with bare hands from their face, then build your burger.


Tasty............



Needless to say, I will not be going back there ever again. I've never once in my life refused food, but after watching this happen we denied our main courses. Then Big Buck still charged us for our soup, bread, and beer (figured I'd be charged for the beer) and the manager came over and said "sorry, fill out this complaint card" and then left...

What a disappointment. When they first opened 15 or so years ago I thought the place was great. When they went public I bought stock hoping they might be the next Outback Steak House. When they opened the one by the Silverdome my stock skyrocketed. Then they opened a couple more and the stock tanked. Since then, I've been in the one in Gaylord a couple times & haven't been impressed.

Oh, for the record, I lost about $500.

What I don't understand is the one in Gaylord is always empty, but stays in business, and the one that was in Auburn Hills was always packed, but it shut down.. Maybe those cooks were licking their fingers and building burgers too.

The place in Auburn Hills cost a fortune to build. Even though it was always packed and the food was good, I just don't think the profit margin was there. I never saw the other 2 places they built but I imagine they were just as big. I'm wondering if the one in Gaylord got bought out by someone after the Corp. went belly up.

This was one of my favorite places to eat also. I Have property in Lewiston not too far
away so when I am up there I always try to eat dinner there at least one night. I also Love the beer cheese soup, but not too long ago they changed thier menu and they have steadily went down hill since. Crappy service and the meals have not been anything to brag about. Thanks for the heads up on the Kitchen atmosphere. I guess i
will have to start visiting the Sugar Bowl now instead.

That's disappointing. I always used to love going to Big Buck in AH. Great food and beer. It's where my parents took me when I turned 21 to buy me my first "officially legal" beer.

I've now decided to support something more local, to me at least, The Frankenmuth Brewery. It just reopened summer of 2009. The food, service and beer is all excellent. I highly recommend it. According to a video I found from their site on youtube. It sounds like they try to support the local farmers and bakeries too. Also their prices are extremely reasonable too!

When I first ate at Big Buck when I was a little kid I thought it was great, but after that it seemed to all go downhill.

A local girl from here in Grayling was a manager there for a long time. Let's just say that Nicole is a less than savory individual. Does not suprise me a bit.

i must say in Las Vegas i ate good.. No worries. never got sick the next day down there.

but have been sick a few times eating Downtown in Da Dee

I'm not sure how true this is but from what I have heard the location in Auburn Hills closed because they did not actually own the property/building and the place they were leasing/renting it from kept increasing the price for the location. As they became more popular the owners of the land thought Big Buck didn't have a choice but to pay the increase but Big Buck end up closing up shop instead.

Again not 100% sure on all of this but it is what I have heard from a few people.

This doesn't surprise me a bit, coming from ANY restaurant. Fast food is the same way, you just don't see it.

10 years ago I worked at a Subway, all the food was prepped with bare hands. The glove rule didn't come along until about the year 2000. Even then stuff like the crab meat was mixed with bare hands because the particular gloves they had were a big PITA. The hand washing rules were there, but who knows if the other people I worked with followed them. Edit: After I thought about it, when I first hired in you used bare hands up front to actually make the sub!

What do you expect for minimum wage/just above

I loved Big Buck in Auburn Hills though, my friends band played there all of the time.

I hate to say this, but I think that we would never be able to eat out again if we saw the kitchen practices every place we eat. I doubt that Big Buck is the only place with unscrupulous cooks in the kitchen.
