You've gotta get your eyes off that gauge. Dash gauges are not precision measuring instruments, they show relative information and will only indicate if something is wildly out of spec (Like omg my engine is ambient or OMG ITS OVERHEATING).

180* vs 190* - I'd say the radiator is suppose to dissipate heat, the coolant should be slightly cooler in the radiator ESPECIALLY if you're checking for temp some distance away from the radiator inlet hose.

If your coolant is 180* and you have poor heat then either the coolant isnt flowing thru the heater core OR your air mixer door isnt closing the cold air off correctly.

As for slow warm up, with the engine COLD start the engine and check for coolant flowing in the radiator. I don't know your specific cooling system setup, but their shouldn't be coolant movement in the radiator until the thermostat starts opening. If there is coolant flowing, either the thermostat is not closing fully or dodge trucks have some weird plumbing that I don't know about.
