These things are stupid expensive, but I'm sure a normal sub would be dead pretty quick.

Hence why I wonder if the pre-fab'd waterproof amp/sub/box sound good.

Is there a serious need for a sub in an off-road rig?

Why not just buy any plain old subwoofer, and get a sealed box for it with a vent for air to pass through that is covered up by something that will deflect water?

I have a Polk Momo 10" in a box that sat outside for 6 months, was in my jeep and I know my amp got wet on more than a few occasions, right now its in my car and still works great. I don't think u need a waterproof one.

I put a normal car speaker box up under the bow of the boat, the bow acts like a trunk and makes good boom boom noises

Our family had some Bose outdoor speakers mounted on a boat house in Florida, The boathouse was destroyed by a hurricane. A week later we found the speakers sitting on the bottom of the bay in salt water. They sounded fine but Bose replaced them for the damage to the outside.
