I brush on before, and during cooking. It flares a little but the fish soaks up some smoky grill flavor that way.

Medium high. Try a lime-based cayenne marinade. Using a grill brush, clean your grates well. Marinate 30 minutes, pat dry, grill. Brush fresh marinade on halfway through. Don't tent your fish unless you want to steam it. Always flip it. Don't use Susie-homemaker utensils- invest in commercial ones, it makes cooking much easier.

Then again, it's your fish, have fun experimenting!

I love mahi but I have never attempted to make it. The grocery store we shop at out here always has some good looking steaks in the fresh fish case. This makes me want to buy some.

Jill doesn't like fish so I don't grill it much. Mahi is just one fish I have never attempted.

I will buy some next time I am at the storm. That is if the flood didn't take out my grocery store. I still can't get over that way because this state is fucked! Lol
