Is that shackle really going to go in the 'right direction' or will it just push straight up into the frame?

The spring will lengthen as it compresses so it should move forward if some hillbilly doesn't just slam it down.

I'm thinking how it's going to move on the trail. I'm no expert, but should it be able to 'over center' like that?

Yes all shackles look like that. That is why boomerang shackles were invented.
