Generally, every TC system has a defeat switch. Thats always done to allow the customer to generate wheelspeed for certain situations.

ESP sometimes can be defeated, or put into a reduced mode with a separate switch, or holding the button longer.

ABS usually cannot be defeated, and doesn't make sense to. Some systems use the ABS system for front to rear proportioning as well, eliminating mechanical proportioning valves. Pulling the ABS fuse would be a bad idea.

Specialized / Enthusiast cars would be exceptions to this, they often have full defeat track modes.

All depends on the manufacturer. There are a few that don't want you to have any control. Some allow more.

My Subaru you can kill the traction control but as soon as you go into oversteer it locks it down . Holding the button beyond 30 seconds results in tcs staying on until the next restart. Pulling the abs fuse results in a max of 4000 rpms until you reset the computer.
