I've had days where I've had to come home and go straight to bed at 7:30, no dinner, just drop my clothes and crawl in bed. With that, I have about 75 employees and I don't make anywhere near those dollars.

I can't imagine what it would be like to have that many employees, large budget, cost constraints and is ALWAYS in the public spotlight. If you offered me that job for $250K I probably would tell you to pound sand.
Let's not mention that the same people get into work before most everyone else, leaves after most everyone else and if they want to spend time with the family, it is usually while the laptop is open and/or the phone is in use.

It's easy to say "Well, they work like that because they want to", but to get good management (and not-so-good, unfortunately) - you have to retain them with a higher salary.

I'm not management, work similar types of hours, but at a wage that (in my mind) justifies it - I'm with Jim here - you couldn't pay me enough to shoulder the kind of burden you see some of the people around here take.
