Question Google map Trails?

If I can see a road on my google maps application on my phone and the road is labeled, does that make it legal to drive on ?

I'm no expert but would say no. Google maps and other mapping software can be outdated, they are not out there checking every year. I've been out riding this year and can not even find some of the roads shown on my Garmin. Driven down a few others only to find them gated by a private owner, the land must have been sold along with the road.

if I were to get pulled over while riding and showed the officer the google map on my phone, would that give me some kind of ignorant leverage?

It might, it depends on their mood and your reaction. When I'm out riding I try to stay on trails that are well traveled and do not climb any side hills and open fields. So far I have not been hassled or stopped yet. When I talked to both the DNR and NFS at the Blessing this year they both said if the trail looks heavily traveled and is not blocked off in anyway you should be safe.
