Do they have any cameras that can do this in "one" shot? By "one" I am saying that the camera may take several photos with different settings whether it's through one lens or multiple.

Any camera that can bracket can do the HDR. Or if it shoots RAW since you can tweek the exp. in processing. I don't think you get quite the same results with RAW but it works and if you want to have people in your shot it's the only way to go.
