How'd you get it to 3000lbs? Thats a lot of weight reduction. Thats what a 5.0 Fox body weighs. (or is it an explorer motor in a non-explorer?)

If you are doggy now, going to 4.10s is just going to make it worse.

The E303 isn't that agressive, shouldn't be totally midrange torque.

Based on how you feel when you drive it, where to you think you are hitting peak torque? Thats around where you want the stall. 2400 isn't much more than stock. I would think 2800 at least. You need to decide what you want it to be good for.

Its a heavy vehicle, and not that powerful of an engine (It sounds like a stock motor with a carb setup and the cam), for 2wd on the sand.

Make sure your setup is tuned up properly, as that can also be a lot of your issues. Bogging off the line could certainly be in your carb setup.
