I'll start it off with my normal breakfast:
Three brown organic eggs, scrambled, very very light olive oil in the pan
Diced fresh green pepper
Diced fresh jalapeno

Pour on plate and sprinkle with some ground chipotle pepper.
Use grass fed butter or ghee (clarified butter) instead of olive oil, olive oil shouldn't be used in high temps it is a very unstable fat for heat and more or less becomes rancid with the heat. Don't get me wrong, it's great to use in it's cold unprocessed state.
Also why no bacon? Bacon that is naturally raised and nitrate free and isn't rubbed with sugar is just fine? Probably less processed than other "breakfast meats".
