Build 2 smaller more practical rigs. If you are serious about harder technical wheeling, I can't picture 8 in a rig any way you shake it. It's tough to even do 4. You're going to come up with some monstrous claptrap rig that is too big to wheel with everyone else and the entire gang is going to be too crowded to enjoy it. I don't know what the age of the kids are but if one is old enough to start driving, it would be good experience. Otherwise, have the GF drive the other rig.
