using coils would require some sort of link suspension system, which will take alot more work designing and building then lining up and welding on some shackle and spring hangers. About the only thing that would be retained from the coil springs would be the upper spring buckets, and maybe the upper shock mounts. Leaf springs can actually flex very well, as long as they are straight or close to it. High arch springs dont flex as well. Using leaf springs would be much easier to install, and will work fine for a full size truck.
You will have to work around the crossmember though, or cut it out and build one with a higher clearance. Other then that, the leaf springs will be fairly straight forward, just make sure everything is square and in line, and bolt it togethor. Make sure you decide on what to do about steering before you start cutting stuff out of the truck, though.
