If you're taking it to a reputable builder, tell him to make it run on midgrade - premium if you can afford it. He will know what to do with machining, but you really can't just go by "milling the heads" - your piston shape, deck height and combustion chamber will all need to work together to run well.
Talk to your builder and listen to him.
