Tom Tom any good for other than getting to grandma's house ?

Can you use these for "off the road" directions.. Say mapping some trails ? or if i go exploring in big rapids and end up somewhere around lake county Mi. (gmc94sonoma will know about that) will it help me get back ? etc.. or are these units just strictly Main streets and highways ?

No.

They are "GPS Navigators", good for on-road use only. Most of them (and I believe all Tom Tom units) don't store tracks, waypoints, etc... They provide nice directions and such, but on-road only.

Get a real mapping GPS.

A second-hand Garmin GPS V can be had under $100 on eBay.

Excellent unit. I've had one for years. It's the Remington 870 of GPSes.
